This dish is call Koy-poo.

1.Ground Pork 1 pound
2.Pork Skin / thin slices 1 cup
3.Toast rice powder 1 teaspoon
4.Green scallions 1/4 cup
5.Basil Leaves 1/4 cup
6.Mint Leaves 1/4 cup
7.Fish sauce or soy sauce 1 teaspoon(use more as needed)
8.Chili powder 1 teaspoon
9.Sugar 1 teaspoon 1o.Lime juice 1 teaspoon(use more as needed) 11.Stone mortar & pestle.

Directions

1. Cook your ground pork and drain it. Put it in a big bowl or pot. 2. Boil the pork skin and slice it thin. Put it together with the ground cooked pork. 3. Toast the raw rice for a few minutes on medium-high until golden brown. Keep flipping them every few seconds so they don’t burn. Pound the toasted rice in a stone mortar and pestle until powdered. 4. Slice the green scallions into 1/2″ (2cm) long pieces. Pull the basil leaves and Mint leaves put it in a bowl. 6. Add the chili powder, sugar, lime juice, toasted rice powder, fish sauce (or soy sauce), green scallions, basil leaves, and mint leaves to ground pork bowl.

Stir it well and it is ready to eat.
